Assorted Dried Fruit Pickle

Ingredients :

40g raisins
40g buah kana
40g dried nutmeg flesh
40g buah kundur
100g dried sour fruit (buah asam kering)
1 piece cinnamon stick
1 star anise
2 cloves
A little oil and 80ml water sugar, salt to taste

Ground Ingredients :

10 drilled chillies
2 tablespoons chilli sauce
3 shallots
4 cloves garlic
20g dried prawns
2cm piece dried shrimp paste
2cm piece ginger
2 teaspoons coriander seeds
2 cake palm sugar

Method :

1. Heat oil in a pan. Saute the ground ingredients, cinnamon stick, star anise, cloves, sugar and salt until fragrant. Then add a little water.
2. Stir in all the dried fruits. Bring to the boil and let it simmer till the gravy thickens and is fairly dry. Remove from heat and leave to cool.
3. This pickle is delicious when served with Briyani Rice.
