1 star anise

10 drilled chillies
2 tablespoons chilli sauce
3 shallots
4 cloves garlic
20g dried prawns
2cm piece dried shrimp paste
2cm piece ginger
2 teaspoons coriander seeds
2 cake palm sugar

<p><strong>Method :</strong></p>
<p>   1. Heat oil in a pan. Saute the ground ingredients, cinnamon stick, star anise, cloves, sugar and salt until fragrant. Then add a little water.<br />
   2. Stir in all the dried fruits. Bring to the boil and let it simmer till the gravy thickens and is fairly dry. Remove from heat and leave to cool.<br />
   3. This pickle is delicious when served with Briyani Rice. </p>
