Chicken Patties

Ingredients :

500g red sweet potatoes (boiled and mashed)

Fried in a little oil then ground
300g chicken meat
100g dried prawns
5 shallots (sliced)
5 cloves garlic (sliced)

1 teaspoon ground black pepper
15g Chinese celery (shredded)
2 eggs (lightly beaten)
2 teaspoons coriander seeds (ground)
plain flour, to coat
oil for deep-frying
sugar and salt to taste

Method :

1. In a large bowl, mix the sweet potatoes, ground ingredients, celery, black pepper, coriander and seasonings well.
2. Shape into small balls then flatten slightly. Roll in flour. Then dip in the egg.
3. Heat oil for deep-frying. Fry the patties in batches till golden brown.
4. Serve with rice or as a satisfying snack.
