Fried Kailan With Salted Fish

Ingredients :

1 salted fish (cut into bite-sized pieces)
400g kailan (cut into 2 cm length)
3 tablespoons oyster sauce
2 teaspoons chilli sauce
6 chili padi / bird chillies (bruised)
Oil for stir-frying
100ml water
Sugar, salt to taste

Ground Ingredients :

4 cloves garlic
3 shallots
2cm piece young ginger
2cm piece dried shrimp paste
50g dried prawns

Method :

1. Heat oil. Put in the ground ingredients, bird chillies and salted fish. Stir-fry till fragrant.
2. Add chili sauce, oyster sauce, sugar, seasoning, kalian stems and water.
3. As soon as the kalian stems are tender, add in the kalian leaves and stir till the gravy boils. Dish up and serve while still hot.
