Ingredients :
3 salted fish (cut small)
600ml coconut milk (squeezed from 1 coconut)
2 stalks lemon grass (bruised)
1 turmeric leaf (knotted)
300g pineapple (diced)
oil for stir-frying
sugar, salt to taste
Ground Ingredients :
2cm piece young ginger
2cm piece dried shrimp paste
4 shallots
5 cloves garlic
20 cili padi / bird chillies
2cm piece turmeric
Method :
1. Heat oil and stir-fry the ground ingredients, lemon grass, turmeric leaf and salted fish.
2. Pour in a little coconut milk. Stir till the oil floats.
3. Put in the remaining coconut milk, sugar and salt to taste.
4. Add the pineapple and bring to the boil. Dish up and serve.
