Kerabu Fried Rice

Ingredients :

500g cooked rice
250g beef (fried and thinly sliced)
ghee for stir-frying
sugar, salt to taste
1/2 cup oil (for frying meat)

Thinly sliced ingredients :

4 long beans
1 medium cucumber (seeded)
1 stalk ginger flower/ bunga kantan
1 stalk lemon grass
15g polygonum leaves
10 cili padi / bird chillies
1 medium carrot

Ground Ingredients :

3 shallots
3 cloves garlic
2cm piece ginger
2cm piece dried shrimp paste
30g dried prawns

Method :

1. Heat ghee, then stir-fry the ground ingredients and seasonings till fragrant.
2. Stir in the rice. Then add in all the thinly sliced ingredients.
3. Mix well.
4. Lastly, put in the fried beef. Let the flavors mingle before serving.
