Ingredients :
700g chicken breast
300g groundnuts (dry-fried, skinned & ground)
1 tablespoon tamarind juice
300ml water
oil for stir-frying
sugar, salt to taste
Ground ingredients :
5 shallots
6 cloves garlic
2cm piece young ginger
2cm pice galangal
3 stalks lemon grass
2cm piece dried shrimp paste
6 dried chillies
Marinade ingredients :
sugar, salt to taste
Ground
2 cloves garlic
2 shallots
2 tablespoons turmeric powder
2 tablespoons chili sauce
Method :
1. Marinate chicken for at least 30 minutes.
2. To prepare the gravy :
heat oil in a pan and stir-fry the ground ingredients till fragrant. Add in the groundnuts (mixed with a little water, sugar and salt to form a paste). Stir till the gravy boils and is thick.
3. Grill the chicken over hot charcoal or roast till it cooks through.
4. Pour the groundnut gravy on the chicken, then serve hot.
