Seri Rampai Mango Pickle

Ingredients :

2 large onion (quartered)
1cm cinnamon stick
1 cardamom
1 star anise
1 clove
2 tablespoons mustard seeds
1 teaspoon vinegar
100g groundnuts (dry-fried)
oil for stir-frying
salt, sugar to taste

Cut thin into 4cm lengths
1 unripe mango
1 medium carrot
1 medium cucumber (seeded)
1 turnip

Ground ingredients
5 dried chillies
3 cloves garlic
2 shallots
2cm piece ginger

Method :

1. Heat oil in a large pan or wok. Stir-fry the ground ingredients, cinnamon stick, cardamom, star anise, clove and seasonings for 2-3 minutes.
2. Combine mango, carrot, cucumber, turnip with the vinegar, onions and mustard seeds. Stir till the vegetables are quite wilted.
3. Add the groundnuts and mix well before serving.
