Ingredients :
8 large squids (discard heads)
350g glutinous rice (washed & drained)
1.5 liter coconut milk
4 cakes palm sugar
50g granulated sugar
5 pandan leaves (knotted)
8 lidi or cocktail sticks
salt to taste
Method :
1. Fill the body of the squids with glutinous rice (do not pack too tightly). Secure the opening with a lidi. Set aside.
2. Place palm sugar, granulated sugar, salt, pandan leaves and coconut milk in a large pan. Bring to the boil, stirring all the time.
3. Carefully drop the squids into the boiling mixture. Cook till the glutinous rice is tender and the squids are cooked.
4. When the gravy has thickened, remove from heat and serve.
