Steamed Sweet and Sour Talapia

Ingredients :

2 large talapia fish

DICED
300g pineapple
1/2 cucumber

2 limes (squeezed to extract juice)
1 teaspoon white pepper
1 piece palm sugar (finely chopped)
2 teaspoons sugar
2 tablespoons chilli sauce
2 tablespoons chilli paste
1 stalk lemon grass (bruised)

BLENDED
4 cloves garlic
2 shallots

1 large onion (sliced)
100ml water
salt to taste
2 tablespoon oil

Method :

1. Rub the fish with lime juice, salt and white pepper. Then steam it till cooked through. Place on a serving platter.
2. To prepare the sweet and sour sauce :
Heat a little oil, saute the blended ingredients, chili sauce, chili paste, palm sugar, sugar, lemon grass, cucumber, pineapple, onion and just enough water to partly cover the mixture.
3. Stir occasionally till the sauce boils.
4. Just before serving, pour the sauce over the fish and garnish.
