Tamarind Dipping Sauce

Ingredients :

1 tbs tamarind concentrate (see Note)
1/2 cup water
2 tbs firmly packed brown sugar
1 tsp grated or very finely minced ginger root
1 clove garlic, crushed
1/2 tsp garam masala
1/4 tsp crushed dried hot pepper

Method :

* Combine all the ingredients in a small saucepan and simmer over low heat, stirring occasionally, for about 10 minutes, or until slightly thickened and syrupy. Let cool before serving. The sauce will keep well, covered, in the refrigerator.
